(18) 3 Stepwise metamorphosis (Abura-soba of Kasuga-tei in Akihabara, Tokyo)

Abura-soba of Kasuga-tei in Akihabara, Tokyo.

Abura-soba is one of the derivative forms of Tsukemen and may be similar to spaghetti.
Abura is oil but Not too much oil is used in it.
It was named Abura-soba since Japanese Otakus love abura, or oil.

In ramen, the noodle is in soup.
In Tsukemen, the noodle and soup are served separately, and you soak it into soup.

In the case of Abura-soba, there is small volume of soup in the bottom of bowl, so you should mix it for certain.

According to the protocol of this shop,
1) you eat it plain.
2) you top some vinegar and chili oil.
3) you add mayonnaise to it
4) you have staff add some liquid to the remaining soup and drink

By the way, a girl in the left picture is "Abura" princess.
