(131) Wagashi (Japanese traditional sweets) of Kamezawa-do, Jimbo-cho

Kamezawa-do in Jimbo-cho.
(Kame is "turtle" in Japanese)

Japanese traditional sweets, Dorayaki and Monaka shaped like turtle.

The dorayaki is the sweets that bean paste is stuffed into two pancakes, one of the most favorite Japanese sweets for me.

The bean paste is difficult to cook deliciously.
(1) Beans are boiled for a long time, keep the skin smooth without rip. If the skin rips, the delicious contents go away.
(2) Mash up the beans with adjusting the sweet taste with sugar, Wa-sambon, which is the most light sugar.
(3) This beans paste is special, they make beans paste without skin. Very smooth and delicious.
