Ramen MUMEI in Kanda, Tokyo
Mumei means "No Bland"
I think the owner wants to be a cook without title.
Go his own way, but what is the object in the center?
1) Ramen with Matured paste of Soy sauce.
Very rich taste and sticky soup.
Noodle is wide, straight one.
You eat it, dissolving the matured paste of soy sauce.
The taste will change.
Infinite appetite! A Gastro-EB is wandering for casual restaurants around in East Tokyo. These restaurants I introduced are highly cited in website 'TABELOG'. I select a restaurant from here, and go there actually and write. Gastrome's map is supposed to show below in PC, but it may not in smartphone. You can see it after downloading google's my map. Sorry for inconvenience. Or click the name of shops which link to its website. Map is word '地図'

(114) Valiant Chunk of Meat (Men-Ya Musashi BUKOTSU in Ueno, Tokyo)
Tsuke-Men of Men-Ya Musashi BUKOTSU in Ueno, Tokyo.
I ordered an ordinary Tsukemen, but the taste is not always ordinary.
The noodle is wide and a little bit chewier than usual. In the case of Miso-stewed Udon, the noodle is usually very chewy and sometimes seems raw. It is one of the charm of Miso-stewed Udon, and Musashi BUKOTSU's noodle shares the charm.
Simmered and grilled pork on the noodle is also fantastic!
Very soft and juicy!
